    Description

    A hearty soup on a cold night!

    Ingredients

    • 2 (32 oz) containers chicken or vegetable stock
    • 1 1/2 tbsp pepper
    • salt, to taste
    • 1 quart water
    • 1 medium onion, diced
    • 2 stalks celery, diced
    • 1 large carrot, diced
    • 1 large ham slice, diced (or a ham bone)

    Directions

    1. Sort through beans and soak over night in 2 quarts of water.
    2. Drain beans and put in 6 quart stock pot.
    3. Dice the onion, carrot and celery. Add to the stock pot.
    4. Add the following: 1 qt water, chicken or vegetable stock and diced ham or ham bone.
    5. Bring to a boil, reduce heat to low, cover and simmer. Stir every 15 minutes. Be careful not to scorch the bottom.
    6. When beans are tender mash with a potato masher. Add salt and pepper to taste.
