    Description

    This soup has tons of vegetable options!

    Ingredients

    • 1 green bell pepper, diced
    • 1 large onion, diced
    • 2 (32 oz) containers vegetable stock
    • 2 cups tomato juice
    • 2 (16 oz) canned tomatoes, stewed or diced
    • 2 stalks celery, diced
    • 1/2 head cabbage, chopped
    • 1 (16 oz) bag frozen mixed vegetables (peas, corn, carrots)
    • 1 small head broccoli, chopped

    Directions

    1. Cut all vegetables in bite size pieces; put in 3 quart stock pot.
    2. Add tomatoes, juice and vegetable stock. Turn heat on medium high until liquid boils; turn down on low to simmer for 2 hours. Vegetables should be tender, but not mushy.
